Ingredients
  

Bouillabaisse Broth
  • 3 tbsp olive oil
  • 1 large onion sliced
  • 1 bulb fennel sliced
  • 4 cloves garlic minced
  • 2 tbsp tomato paste
  • 1 can crushed tomatoes 14 oz
  • 4 cups fish stock
  • 1 cup white wine
  • 1/2 tsp saffron threads
Seafood
  • 12 oz white fish fillets cut into chunks
  • 8 oz shrimp peeled
  • 1 lb mussels cleaned

Equipment

  • Large pot
  • Knife
  • Cutting board

Method
 

  1. Sauté onion, fennel, and leek in olive oil until soft.
  2. Add garlic, tomato paste, tomatoes, stock, wine, and spices.
  3. Simmer broth for 30 minutes.
  4. Add fish, then shrimp and mussels, cooking until just done.
  5. Garnish and serve hot.

Notes

Serve immediately for best seafood texture.
