Toast Base
  • 8 slices brioche bread
  • 6 slices thick-cut bacon crispy
  • 3 eggs for batter
  • 4 oz cream cheese softened
  • 2 tbsp maple syrup plus more for topping
  • 1 tbsp bourbon optional
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 cup milk or half-and-half
  • 1 tbsp butter for frying
  • salt pinch

Method
 

  1. Mix cream cheese, maple syrup, bourbon, and cinnamon until smooth.
  2. Cook bacon until crisp; reserve 1 tablespoon of bacon grease.
  3. Spread filling on bread, layer bacon, and top with another slice.
  4. Whisk eggs, milk, vanilla, and salt together.
  5. Dip sandwiches into the mixture and fry in butter until golden.
  6. Top with fried egg and drizzle with maple syrup before serving.
