Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
Filling
  • 1 cup brown sugar, packed
  • 2 teaspoons ground cinnamon
  • 2 tablespoons all-purpose flour
  • 4 tablespoons unsalted butter, melted
Glaze
  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking powder, baking soda, salt, and cinnamon in a bowl.
  3. Cream butter, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla.
  4. Add dry ingredients to wet ingredients to form dough.
  5. Mix brown sugar, cinnamon, flour, and melted butter to create filling.
  6. Roll out dough and cut into rectangles. Place half on baking sheet.
  7. Spoon filling onto rectangles, top with another, and crimp edges with a fork.
  8. Bake for 12–15 minutes until edges are golden brown.
  9. Cool, drizzle with glaze, and sprinkle with sugar if desired.

Notes

Let glaze set before storing. Best enjoyed fresh with a warm drink.
