- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Whisk flour, baking powder, baking soda, salt, and cinnamon in a bowl.
- Cream butter, brown sugar, and granulated sugar until fluffy. Beat in egg and vanilla.
- Add dry ingredients to wet ingredients to form dough.
- Mix brown sugar, cinnamon, flour, and melted butter to create filling.
- Roll out dough and cut into rectangles. Place half on baking sheet.
- Spoon filling onto rectangles, top with another, and crimp edges with a fork.
- Bake for 12–15 minutes until edges are golden brown.
- Cool, drizzle with glaze, and sprinkle with sugar if desired.
Notes
Let glaze set before storing. Best enjoyed fresh with a warm drink.
