Ingredients
  

Buffalo Chicken Filling
  • 2 cups shredded cooked chicken rotisserie or leftover chicken
  • 4 oz cream cheese softened
  • 1/2 cup buffalo wing sauce
  • 1 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese optional
  • 2 green onions finely chopped
Assembly
  • 12 egg roll wrappers
  • vegetable oil for frying
  • ranch or blue cheese dressing for dipping

Method
 

  1. In a bowl, combine chicken, cream cheese, buffalo sauce, cheddar cheese, and green onions until creamy.
  2. Lay an egg roll wrapper with a corner facing you. Spoon about 2 tablespoons of filling into the center.
  3. Fold the bottom corner over filling, tuck in sides, and roll tightly. Seal with water.
  4. Heat oil to 350°F (175°C). Fry egg rolls in batches until golden, 3–4 minutes. Drain on paper towels.
  5. Alternatively, bake at 425°F (220°C) for 15–18 minutes, turning halfway.
  6. Serve warm with ranch or blue cheese dressing.
