  • 1 large butternut squash peeled and thinly sliced
  • 1 tablespoon olive oil
  • 2 tablespoons butter melted
  • 1 cup heavy cream
  • 3 cloves garlic minced
  • 1 cup shredded Gruyère
  • 0.75 cup grated Parmesan
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon thyme fresh or dried
  • 0.25 teaspoon nutmeg optional

Method
 

  1. Preheat oven to 400°F.
  2. Slice butternut squash thinly and arrange in baking dish.
  3. Whisk cream, garlic, butter, salt, pepper, thyme, and nutmeg.
  4. Pour mixture over squash.
  5. Top with Parmesan and Gruyère.
  6. Bake covered 30 minutes, then uncovered 20–25 until golden.
  7. Rest 10 minutes before serving.

Notes

Slice squash as evenly as possible for consistent cooking.
