  • 1.5 pounds chicken breast or thighs cut into pieces
  • 1.5 teaspoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1.5 cups long-grain white rice
  • 3 cups chicken broth
  • 1 small onion diced
  • 2 medium bell peppers diced
  • 3 cloves garlic minced

Method
 

  1. Season chicken with Cajun seasoning and spices.
  2. Brown chicken in olive oil and remove from pan.
  3. Sauté onion, peppers, and garlic.
  4. Stir in rice and chicken broth.
  5. Return chicken, cover, and simmer until rice is tender.

Notes

Adjust spice level by increasing or reducing Cajun seasoning.
