  • 1.5 pounds ground chicken
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons Cajun seasoning adjust to taste
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt to taste
  • 0.25 teaspoon black pepper
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 0.5 cup chicken broth
  • 6 brioche or sandwich buns, toasted
  • Optional toppings: pickles, lettuce, cheese, parsley

Equipment

Method
 

  1. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers for 3–4 minutes until softened.
  2. Add garlic, Cajun seasoning, paprika, salt, and black pepper. Cook 30 seconds to release aroma.
  3. Add ground chicken and cook until browned, about 7 minutes.
  4. Stir in tomato sauce, tomato paste, Worcestershire sauce, brown sugar, and chicken broth.
  5. Simmer 10–15 minutes until sauce thickens.
  6. Toast buns and assemble sandwiches with desired toppings.

Notes

For extra heat, add hot sauce or crushed red pepper flakes to the mixture.
