Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 5 tbsp unsalted butter melted
  • 2 tbsp brown sugar
Filling
  • 8 oz cream cheese softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream or whipped topping
Apple Topping
  • 2 medium apples peeled, cored, diced
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 1 tbsp butter
  • 2 tbsp brown sugar
Finish
  • 0.5 cup caramel sauce for drizzling

Equipment

  • Mixing bowls
  • Hand mixer
  • Small cups or jars

Method
 

  1. Combine graham cracker crumbs, melted butter, and brown sugar. Press into cup bottoms to form crust.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream. Spoon over crust.
  3. Cook diced apples with butter, cinnamon, lemon juice, and brown sugar until tender. Let cool slightly.
  4. Spoon apples over cheesecake layer.
  5. Drizzle with caramel sauce and sprinkle with extra crumbs.
  6. Chill at least 30 minutes or serve immediately.

Notes

Best served chilled. Store in refrigerator up to 3 days. Add extra caramel before serving if desired.
