Ingredients
  

Cookie Dough
  • 2.75 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp cream of tartar
  • 0.5 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
Caramel Filling
  • 20 soft caramels, unwrapped
  • 1 tbsp heavy cream (optional)
  • extra sugar for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk flour, baking soda, cream of tartar, and salt in a bowl.
  3. Beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add egg and vanilla extract; mix until smooth.
  5. Add dry ingredients gradually to form a soft dough.
  6. Wrap each softened caramel in cookie dough, sealing completely, and roll in sugar.
  7. Bake for 9–11 minutes until edges are golden and centers soft.
  8. Cool on pan for 5 minutes before transferring to a wire rack.

Notes

For a salted caramel twist, sprinkle sea salt on top before baking.
