Method
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk flour, baking soda, cream of tartar, and salt in a bowl.
- Beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla extract; mix until smooth.
- Add dry ingredients gradually to form a soft dough.
- Wrap each softened caramel in cookie dough, sealing completely, and roll in sugar.
- Bake for 9–11 minutes until edges are golden and centers soft.
- Cool on pan for 5 minutes before transferring to a wire rack.
Notes
For a salted caramel twist, sprinkle sea salt on top before baking.
