Ingredients
  

  • 1 lb boneless skinless chicken thighs, cut into pieces
  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce optional
  • 2 tbsp brown sugar
  • 2 tbsp honey
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp sesame oil, divided
  • 2 cups chicken broth
  • 2 tbsp rice vinegar or lime juice
  • 2 cups cooked jasmine rice
  • 2 green onions, sliced for garnish
  • 1 tsp sesame seeds for garnish

Method
 

  1. Season chicken with salt and pepper.
  2. In a large skillet, heat sesame oil and caramelize brown sugar and honey until bubbling.
  3. Add chicken and sear until golden brown on all sides.
  4. Add garlic and ginger; sauté until fragrant.
  5. Pour in soy sauce, dark soy sauce, and chicken broth. Simmer 10 minutes.
  6. Add vinegar or lime juice to balance flavor.
  7. Serve over cooked rice, garnished with green onions and sesame seeds.

Notes

Simmer the broth gently to keep the chicken tender. Adjust sweetness or saltiness to your taste.
