Method
- Preheat oven to 350°F (175°C). Line a 9x13 pan with parchment and grease lightly.
- Combine oats, flour, brown sugar, baking soda, and salt in a large bowl. Stir in melted butter until crumbly.
- Press half of the mixture into the bottom of the pan and bake for 10 minutes.
- Melt caramels with heavy cream in a saucepan over medium-low heat until smooth. Stir in vanilla.
- Sprinkle chocolate chips over the baked crust, pour caramel over, and crumble remaining oat mixture on top.
- Bake 18–20 minutes until golden. Cool completely before cutting into bars.
Notes
For salted caramelitas, sprinkle flaky sea salt on top before baking.
