Caramelitas

Chewy oatmeal bars layered with melted caramel and chocolate for the ultimate gooey dessert treat.

Ingredients
  

  • 2 cups old-fashioned rolled oats
  • 2 cups all-purpose flour
  • 1 1/2 cups brown sugar, packed
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 1/4 cups unsalted butter, melted
  • 1 cup semi-sweet chocolate chips
  • 1 cup caramel bits or soft caramels
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9x13 pan with parchment and grease lightly.
  2. Combine oats, flour, brown sugar, baking soda, and salt in a large bowl. Stir in melted butter until crumbly.
  3. Press half of the mixture into the bottom of the pan and bake for 10 minutes.
  4. Melt caramels with heavy cream in a saucepan over medium-low heat until smooth. Stir in vanilla.
  5. Sprinkle chocolate chips over the baked crust, pour caramel over, and crumble remaining oat mixture on top.
  6. Bake 18–20 minutes until golden. Cool completely before cutting into bars.

Notes

For salted caramelitas, sprinkle flaky sea salt on top before baking.
