Ingredients
  

  • 2.25 teaspoons active dry yeast
  • 1.5 cups warm water about 110°F
  • 1 tablespoon granulated sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons unsalted butter melted
  • 1 cup shredded sharp cheddar cheese
  • 2 jalapeños finely diced
  • 10 cups water for boiling
  • 0.66 cup baking soda
  • 1 egg beaten for egg wash
  • coarse salt for topping

Method
 

  1. Combine warm water, sugar, and yeast in a bowl. Let sit 5 minutes until frothy.
  2. Add butter, salt, and flour. Stir until dough forms. Mix in cheddar and jalapeños.
  3. Knead for 5–7 minutes, then let rise 1 hour.
  4. Preheat oven to 425°F (220°C). Boil 10 cups of water with baking soda.
  5. Shape dough into ropes and cut into 1½-inch bites.
  6. Boil bites 30 seconds, then place on parchment-lined baking sheet.
  7. Brush with egg wash, sprinkle with salt, and bake 12–15 minutes until golden.
  8. Brush with butter and serve warm.
