Bacon Bombs
  • 1.5 pounds ground beef
  • 1 cup cheddar cheese, cubed
  • 1 egg
  • 0.5 cup breadcrumbs
  • 2 tbsp BBQ seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 12 slices bacon thin-cut
  • 1 cup BBQ sauce for glazing

Method
 

  1. Mix ground beef, egg, breadcrumbs, and seasonings until combined.
  2. Form meatballs with cheddar cubes stuffed in the center.
  3. Wrap each meatball in bacon and secure with toothpicks.
  4. Brush lightly with BBQ sauce.
  5. Bake or grill until bacon is crisp and meat is cooked through.
  6. Glaze with remaining BBQ sauce in the final minutes of cooking.

Notes

Chilling cheese helps prevent leaking. Use thin bacon for best crisp.
