- Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- Heat olive oil in a skillet, add onion and cook 2 minutes. Add ground beef and cook until browned. Drain fat.
- Add garlic, salt, pepper, ketchup, and mustard. Cook 1 minute.
- Stir in cream of mushroom soup, sour cream, and 1 cup cheese until smooth.
- Spread beef mixture into baking dish and top with frozen French fries.
- Bake 35–40 minutes until fries are golden and crisp.
- Top with remaining cheese and bake 5 more minutes until melted. Garnish with parsley.
