Soup Base
  • 1 lb ground beef
  • 1.5 lb baby potatoes halved
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 4 cups broth chicken or beef
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 2 cups shredded cheddar cheese

Method
 

  1. Brown ground beef and set aside.
  2. Sauté onion and garlic in butter.
  3. Stir in flour, then whisk in broth.
  4. Add potatoes and simmer until tender.
  5. Stir in milk, cream, beef, and cheese until smooth.
