Casserole Base
  • 2 cups cooked chicken diced or shredded
  • 2 cups cooked white rice
  • 2 cups broccoli florets lightly cooked
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups milk
  • 1 clove garlic minced
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1.5 cups cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded

Method
 

  1. Preheat oven and grease a casserole dish.
  2. Cook broccoli until just tender and set aside.
  3. Melt butter and sauté garlic in a saucepan.
  4. Whisk in flour, then slowly add milk until thickened.
  5. Season sauce and stir in cheeses until melted.
  6. Combine rice, chicken, broccoli, and sauce.
  7. Transfer to dish and bake until bubbly and golden.

Notes

Use rotisserie chicken for convenience. Add breadcrumbs for crunch if desired.
