  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 10 oz red enchilada sauce
  • 14 oz diced tomatoes
  • 2 cups uncooked elbow macaroni
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 cups shredded cheddar cheese
  • 0.25 cup sour cream (optional)
  • 2 tbsp fresh cilantro or green onions, for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned.
  2. Add onion and garlic, cook until fragrant.
  3. Stir in chili powder, cumin, paprika, salt, and pepper.
  4. Pour in enchilada sauce, diced tomatoes, and beef broth. Stir to combine.
  5. Add uncooked pasta, cover, and simmer for 12–15 minutes until pasta is tender.
  6. Remove from heat, stir in cheese and sour cream until melted and creamy.
  7. Garnish with cilantro or green onions and serve warm.
