- Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned.
- Add onion and garlic, cook until fragrant.
- Stir in chili powder, cumin, paprika, salt, and pepper.
- Pour in enchilada sauce, diced tomatoes, and beef broth. Stir to combine.
- Add uncooked pasta, cover, and simmer for 12–15 minutes until pasta is tender.
- Remove from heat, stir in cheese and sour cream until melted and creamy.
- Garnish with cilantro or green onions and serve warm.
