Casserole Base
  • 1 pound ground beef
  • 2 cups cooked white rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup or cream of chicken
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup shredded cheddar cheese plus extra for topping
  • 0.5 cup sour cream or milk
  • 0.5 teaspoon paprika
  • 0.5 teaspoon dried parsley
  • salt and black pepper, to taste
  • 1 tablespoon olive oil or butter
  • fresh parsley, chopped (for garnish)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Cook rice according to package directions.
  3. Brown ground beef in a skillet; drain excess fat.
  4. Add onion and garlic; cook until softened.
  5. Stir in seasonings, diced tomatoes, soup, sour cream, rice, and cheese.
  6. Spread mixture into baking dish; top with extra cheese.
  7. Bake for 20–25 minutes until bubbly and golden. Garnish with parsley.

Notes

For extra texture, top with breadcrumbs or crushed crackers before baking.
