Ingredients
  

Beef Mixture
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
Casserole Base
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup or cream of chicken
  • 1 cup shredded cheddar cheese plus extra for topping
  • 0.5 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook onion in olive oil until translucent. Add garlic and sauté for 30 seconds.
  3. Add ground beef and cook until browned; drain excess grease.
  4. Stir in paprika, salt, and black pepper.
  5. In a mixing bowl, combine beef mixture, uncooked rice, soup, and broth.
  6. Pour into dish, cover with foil, and bake 45–50 minutes.
  7. Remove foil, top with cheese, and bake 10 more minutes until bubbly.
  8. Let rest 5 minutes before serving. Garnish with parsley.

Notes

This casserole reheats beautifully and can be made ahead for meal prep. Try adding veggies like peas or carrots for extra nutrition.
