Ingredients
  

  • 1 lb ground beef or beef and pork mix
  • 1 egg
  • 0.5 cup breadcrumbs
  • 0.25 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 medium potatoes peeled and cubed
  • 1 cup shredded mozzarella cheese
  • 0.5 cup shredded cheddar cheese
  • 1 medium onion diced
  • 1 tablespoon olive oil
  • 0.5 cup heavy cream or milk
  • 2 tablespoons butter melted
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and grease a 9x13 baking dish.
  2. Combine beef, egg, breadcrumbs, Parmesan, garlic, onion powder, paprika, salt, and pepper. Form into meatballs.
  3. Brown meatballs in skillet for 2–3 minutes per side; transfer to plate.
  4. Add diced potatoes and onions to baking dish, drizzle with melted butter, and season lightly.
  5. Arrange meatballs on top, pour over heavy cream, and cover with foil.
  6. Bake 35–40 minutes until potatoes are tender, then top with cheeses and bake uncovered 10 more minutes.
  7. Garnish with parsley and serve warm.
