Ingredients
  

Cherry Amaretto Tiramisu
  • 1.5 cups cherries, pitted fresh or frozen
  • 1/3 cup sugar
  • 2 tbsp lemon juice
  • 1 cup espresso or strong coffee cooled
  • 1/3 cup amaretto
  • 24 ladyfingers (Savoiardi)
  • 16 oz mascarpone cheese softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract optional
  • cocoa powder for dusting

Equipment

  • Mixing bowls

  • Hand mixer or stand mixer

Method
 

  1. Simmer cherries, sugar, and lemon juice to make a compote.
  2. Mix cooled espresso with amaretto for dipping ladyfingers.
  3. Whip heavy cream, then fold into mascarpone mixture.
  4. Dip ladyfingers briefly into coffee mixture and layer in dish.
  5. Spread mascarpone cream and cherry compote in alternating layers.
  6. Dust with cocoa and chill at least 4 hours before serving.

Notes

Best made the night before serving for deeper flavor.
