Ingredients
  

Cookie Dough
  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin purée
  • 1 egg yolk
  • 2 tsp vanilla extract
Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp cloves
Mix-Ins
  • 1 cup chocolate chips

Method
 

  1. Mix melted butter and sugars until smooth.
  2. Add pumpkin, egg yolk, and vanilla.
  3. Whisk dry ingredients together and fold into wet mixture.
  4. Add chocolate chips and scoop dough onto baking sheet.
  5. Bake 10–12 minutes until edges are set.
