Ingredients
  

Chicken
  • 1.5 pounds boneless chicken breasts or thighs, cut into bite-sized pieces
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • salt and pepper, to taste
  • 2 tablespoons olive oil
Garlic Parmesan Rice
  • 2 tablespoons butter
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2.5 cups chicken broth
  • 1 cup corn kernels
  • 0.5 cup heavy cream
  • 0.75 cup grated parmesan cheese
  • 1 tablespoon chopped parsley

Method
 

  1. Season chicken with paprika, garlic powder, salt, and pepper. Sear until golden and cooked through.
  2. Sauté onion and garlic in butter until fragrant.
  3. Add rice and toast for 1–2 minutes.
  4. Add broth and simmer until rice is tender, about 15 minutes.
  5. Stir in corn and cream; cook until thickened.
  6. Add parmesan and chicken; mix well and garnish with parsley.

Notes

Add a splash of milk when reheating to restore creaminess.
