  • 2 cups cooked chicken shredded or cubed
  • 2 cups cooked rice white or brown
  • 2 cups broccoli florets fresh or frozen
  • 1 can (10.5 oz) cream of chicken soup
  • 0.5 cup sour cream
  • 0.5 cup milk
  • 1.5 cups cheddar cheese shredded, divided
  • 2 tbsp butter
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp paprika
  • 2 tbsp grated Parmesan optional
  • 2 tbsp fresh parsley for garnish

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x13-inch baking dish.
  2. Cook chicken and rice according to directions.
  3. Steam broccoli florets until slightly tender and drain.
  4. Sauté onion and garlic in butter until fragrant.
  5. Mix soup, sour cream, milk, and seasonings in a large bowl until smooth.
  6. Stir in chicken, rice, broccoli, onions, and 1 cup of cheese.
  7. Transfer to baking dish, top with remaining cheese and Parmesan, and bake 25–30 minutes.
  8. Garnish with parsley and serve hot.
