Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 0.5 cup breadcrumbs
  • 0.25 cup parmesan cheese grated
  • 1 egg
  • 2 cloves garlic minced
  • 0.25 cup onion finely diced
  • 1 tbsp parsley chopped
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp Italian seasoning
Florentine Sauce
  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 0.5 cup parmesan cheese grated
  • 2 cups fresh spinach
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Combine ground chicken, breadcrumbs, parmesan, egg, garlic, onion, parsley, salt, pepper, and Italian seasoning in a bowl.
  2. Roll the mixture into small meatballs about 1–1½ inches in size.
  3. Heat olive oil in a skillet and brown meatballs on all sides.
  4. Remove meatballs and melt butter in the same pan.
  5. Sauté garlic until fragrant.
  6. Add chicken broth and heavy cream, simmering gently.
  7. Stir in parmesan cheese and seasonings.
  8. Add spinach and cook until wilted.
  9. Return meatballs to the pan and simmer until cooked through.
  10. Serve hot with pasta, rice, or bread.

Notes

For extra flavor, add mushrooms or a splash of lemon juice to the sauce.
