Ingredients
  

Zucchini Boats
  • 4 medium zucchini
  • 2 cups cooked chicken shredded or chopped
  • 1 cup marinara sauce
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup breadcrumbs

Method
 

  1. Preheat oven to 400°F and prepare baking sheet.
  2. Slice zucchini, scoop centers, brush with oil, and pre-bake.
  3. Mix chicken with marinara, garlic, and seasoning.
  4. Fill zucchini, top with cheeses and breadcrumbs.
  5. Bake until bubbly and lightly golden.

Notes

Broil briefly at the end for a classic chicken parmesan finish.
