Ingredients
  

Chicken
  • 900 g boneless skinless chicken thighs
Marinade
  • 1 cup plain yogurt
  • 3 tbsp olive oil
  • 3 tbsp lemon juice
  • 4 cloves garlic minced
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp smoked paprika
  • 1 tsp ground turmeric
  • 0.5 tsp ground cinnamon
  • 0.5 tsp cayenne pepper
  • 1.5 tsp salt
  • 1 tsp black pepper
Garlic Sauce
  • 6 cloves garlic
  • 1 cup neutral oil
  • 2 tbsp lemon juice
  • 0.5 tsp salt
  • 2 tbsp cold water

Equipment

  • Mixing bowls
  • Skillet or grill pan

Method
 

  1. Mix marinade ingredients in a bowl until smooth.
  2. Coat chicken thoroughly and marinate for at least 120 minutes.
  3. Cook chicken in a hot skillet until golden and cooked through.
  4. Rest and slice chicken thinly.
  5. Blend garlic and salt, then emulsify with oil, lemon juice, and water to make sauce.

Notes

For best flavor, marinate the chicken overnight and serve with warm pita bread.
