  • 1.5 lbs boneless skinless chicken breasts cut into pieces
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 8 oz mushrooms sliced
  • 3 cups fresh spinach leaves
  • 1 cup heavy cream
  • 0.5 cup chicken broth
  • 1 tsp Dijon mustard
  • 0.5 tsp paprika
  • 0.5 tsp dried thyme
  • 1 cup shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Cook chicken pieces in olive oil until golden brown. Set aside.
  3. Sauté onion, garlic, and mushrooms in butter until tender.
  4. Add spinach and cook until wilted.
  5. Pour in heavy cream, chicken broth, Dijon mustard, paprika, and thyme. Simmer 3–4 minutes.
  6. Combine cooked chicken with sauce, then transfer to baking dish.
  7. Top with mozzarella and Parmesan cheese.
  8. Bake 20 minutes until golden and bubbly. Garnish with parsley.
