Casserole Ingredients
  • 2 cups cooked wild rice blend
  • 2-3 cups cooked chicken, shredded
  • 2 tbsp butter
  • 1 onion, diced
  • 2 celery stalks, diced
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp poultry seasoning
  • 1 tbsp flour (optional)
Creamy Sauce
  • 1.5 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup parmesan cheese, grated
Topping
  • 1/2 cup mozzarella or Swiss cheese

Equipment

Method
 

  1. Cook wild rice and set aside.
  2. Sauté onion, celery, and mushrooms in butter.
  3. Add garlic, salt, pepper, thyme, and poultry seasoning.
  4. Add flour if using, then whisk in broth and cream.
  5. Stir in sour cream and parmesan.
  6. Combine chicken, rice, and sauce in casserole dish.
  7. Top with cheese and bake 25–30 minutes.
