  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 cup cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach or greens optional
Chimichurri Sauce
  • 1 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 0.5 cup olive oil
  • 0.5 tsp crushed red pepper flakes
  • to taste salt and black pepper

Method
 

  1. Marinate chicken with olive oil, paprika, garlic powder, onion powder, salt, and pepper.
  2. Grill or sear chicken on medium-high heat until golden and cooked through.
  3. Combine parsley, garlic, vinegar, olive oil, and chili flakes for chimichurri.
  4. Assemble rice, greens, and tomatoes in bowls. Top with sliced chicken.
  5. Drizzle chimichurri over chicken and serve immediately.

Notes

Store sauce separately and drizzle before serving for maximum freshness.
