Method
- Mix all marinade ingredients until smooth.
- Marinate pork at least 4 hours or overnight.
- Preheat oven to 400°F and place pork on wire rack.
- Bake 20 minutes, then baste generously.
- Bake an additional 15–20 minutes, basting regularly.
- Broil 2–3 minutes for charred edges.
- Rest 10 minutes and slice.
Notes
Use pork shoulder for the juiciest results. Red coloring optional.
