Ingredients
  

Chipotle Chicken
  • 1.5 lbs chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp honey
  • 2 chipotle peppers minced
  • 1 tbsp adobo sauce
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
Bowl Ingredients
  • 2 cups rice cooked
  • 1 can black beans rinsed and drained
  • 1 cup corn
  • 1 avocado sliced
  • 1 cup lettuce shredded
  • 1/4 cup cilantro chopped
Creamy Chipotle Sauce
  • 1/2 cup sour cream
  • 1/4 cup mayo
  • 1 chipotle pepper
  • 1 tsp adobo sauce
  • 1/2 lime juiced
  • 1 clove garlic

Equipment

Method
 

  1. Marinate chicken in chipotle, spices, honey, and lime.
  2. Grill or pan-sear chicken until cooked through and slice.
  3. Blend chipotle sauce ingredients until smooth.
  4. Warm beans and corn in a skillet.
  5. Assemble bowls with rice, chicken, beans, corn, avocado, and lettuce.
  6. Drizzle with creamy chipotle sauce and garnish with cilantro.

Notes

Add extra chipotle peppers for more heat or use Greek yogurt to lighten the sauce.
