Ingredients
  

Crust
  • 1.5 cups chocolate cookie crumbs
  • 0.25 cup unsalted butter melted
  • 2 tbsp cocoa powder
  • 2 tbsp granulated sugar
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.25 cup sour cream
Topping
  • 21 oz cherry pie filling
  • 0.5 cup semi-sweet chocolate chips for drizzle

  • Mixing bowls

Method
 

  1. Preheat oven to 325°F (160°C) and line an 8x8 pan with parchment.
  2. Mix crust ingredients and press into pan; bake 10 minutes.
  3. Beat cream cheese and sugar until smooth; add eggs, vanilla, and sour cream.
  4. Pour over crust and bake 30–35 minutes until set.
  5. Cool, then refrigerate 3 hours or overnight.
  6. Spread cherry pie filling on top and drizzle with melted chocolate.
  7. Slice into bars and serve chilled.
