Ingredients
  

Cheesecake Filling
  • 150 g cream cheese softened
  • 2 tbsp granulated sugar
  • 0.5 tsp vanilla extract
Cookie Dough
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.25 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 1 cup semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy. Add egg and vanilla, mixing well.
  4. Whisk flour, baking soda, and salt in a separate bowl. Gradually mix into butter mixture. Stir in chocolate chips.
  5. Scoop 1 tbsp of cookie dough, flatten slightly, place 1 tsp cheesecake filling in center, fold dough around it, roll into a ball.
  6. Place cookies on baking sheet, 2 inches apart. Bake 12-14 minutes until edges are lightly golden.
  7. Cool on baking sheet for 5 minutes, then transfer to wire rack. Serve warm or store in airtight container.

Notes

Optional: Add lemon zest or mini chocolate chips to filling. Store in airtight container 2-3 days or freeze cookie balls for later.
