Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a small bowl, mix cream cheese, granulated sugar, and vanilla extract until smooth.
- In a large bowl, cream butter, brown sugar, and granulated sugar until fluffy. Add egg and vanilla, mixing well.
- Whisk flour, baking soda, and salt in a separate bowl. Gradually mix into butter mixture. Stir in chocolate chips.
- Scoop 1 tbsp of cookie dough, flatten slightly, place 1 tsp cheesecake filling in center, fold dough around it, roll into a ball.
- Place cookies on baking sheet, 2 inches apart. Bake 12-14 minutes until edges are lightly golden.
- Cool on baking sheet for 5 minutes, then transfer to wire rack. Serve warm or store in airtight container.
Notes
Optional: Add lemon zest or mini chocolate chips to filling. Store in airtight container 2-3 days or freeze cookie balls for later.
