- Preheat oven to 350°F (175°C) and prepare a muffin tin.
- Whisk dry ingredients in one bowl.
- Mix wet ingredients in another bowl.
- Combine wet and dry ingredients.
- Fold in zucchini and chocolate chips.
- Scoop into muffin tin and bake 18–22 minutes.
Notes
Zucchini does not need to be drained; the moisture keeps the muffins extra soft.
