Ingredients
  

Salad
  • 2 cans chickpeas drained and rinsed
  • 1 red bell pepper finely chopped
  • 1 cup shredded carrots
  • 1 cup purple cabbage finely chopped
  • 3 green onions sliced
  • 0.25 cup fresh cilantro chopped
  • 0.25 cup roasted peanuts crushed
Curry Peanut Dressing
  • 0.33 cup peanut butter
  • 1 tbsp curry powder
  • 1 tbsp soy sauce
  • 1 tbsp honey or maple syrup
  • 2 tbsp fresh lime juice
  • 1 garlic clove minced
  • 1 tsp fresh ginger grated
  • 2-4 tbsp warm water to thin dressing

Method
 

  1. Drain and rinse chickpeas, pat dry.
  2. Finely chop vegetables and herbs.
  3. Whisk together all dressing ingredients, thinning with warm water.
  4. Combine salad ingredients in large bowl.
  5. Toss with dressing until evenly coated.
  6. Top with crushed peanuts and serve.

Notes

Let salad rest 15 minutes before serving for best flavor.
