Ingredients
  

Cookies
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp salt
  • 3 cups rolled oats
  • 0.5 cup holiday sprinkles
Cream Filling
  • 0.75 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1.5 cups marshmallow creme
  • 1 tsp vanilla extract
  • pinch of salt
  • 0.25 cup holiday sprinkles optional

Equipment

Method
 

  1. Cream butter and sugars, then mix in eggs and vanilla.
  2. Whisk flour, baking soda, cinnamon, and salt; add to wet mixture.
  3. Stir in oats and sprinkles.
  4. Scoop dough and bake at 350°F until edges are golden.
  5. Beat butter, powdered sugar, marshmallow creme, vanilla, and salt into a fluffy filling.
  6. Sandwich filling between two cookies and roll edges in sprinkles.

Notes

For thick cookies, chill dough 30 minutes before baking.
