Method
- Whisk flour, baking powder, and salt in a medium bowl.
- Cream butter and sugar until light and fluffy.
- Beat in eggs and vanilla extract.
- Gradually mix in dry ingredients to form dough.
- Divide dough into three portions; tint one red, one green, and leave one plain.
- Roll dough layers between parchment paper, stack, and roll into a log. Chill for 2 hours.
- Preheat oven to 350°F (175°C) and prepare baking sheets.
- Slice dough into rounds, roll edges in sprinkles if desired, and bake for 8–10 minutes.
- Cool on baking sheets for 2 minutes before transferring to a wire rack.

Store cookies in an airtight container for up to 1 week. Dough can be frozen for up to 3 months.
