Ingredients
  

Christmas Roast
  • 4-5 lb beef roast chuck or top round
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme leaves
  • 6 cloves garlic minced
  • 3 tbsp butter softened
  • 1 onion quartered
  • 4 carrots chopped
  • 3 celery stalks chopped
  • 2 tbsp Worcestershire sauce
  • 2 cups beef broth
  • 2 tbsp olive oil

Method
 

  1. Pat the beef roast dry to help browning.
  2. Mix salt, pepper, garlic powder, onion powder, rosemary, and thyme; rub onto roast.
  3. Heat olive oil in a pan and sear roast on all sides until browned.
  4. Place onions, carrots, and celery in the bottom of a roasting pan.
  5. Set roast on top of vegetables.
  6. Spread minced garlic on top and dot with softened butter.
  7. Pour beef broth and Worcestershire sauce around the roast.
  8. Cover and roast at 325°F (165°C) for 3.5–4 hours.
  9. Let roast rest 10–15 minutes before slicing.
  10. Strain juices and thicken for gravy if desired.

Notes

Best served with mashed potatoes and roasted vegetables for a full holiday feast.
