Method
- Pat the beef roast dry to help browning.
- Mix salt, pepper, garlic powder, onion powder, rosemary, and thyme; rub onto roast.
- Heat olive oil in a pan and sear roast on all sides until browned.
- Place onions, carrots, and celery in the bottom of a roasting pan.
- Set roast on top of vegetables.
- Spread minced garlic on top and dot with softened butter.
- Pour beef broth and Worcestershire sauce around the roast.
- Cover and roast at 325°F (165°C) for 3.5–4 hours.
- Let roast rest 10–15 minutes before slicing.
- Strain juices and thicken for gravy if desired.
Notes
Best served with mashed potatoes and roasted vegetables for a full holiday feast.
