Ingredients
  

Salad Ingredients
  • 6 cups mixed greens
  • 1 cup pomegranate seeds
  • 2 oranges peeled and sliced
  • 1/2 cup feta or goat cheese crumbled
  • 1/2 cup pecans or walnuts toasted
  • 1/4 red onion thinly sliced
  • 2 tbsp fresh herbs optional
Dressing
  • 3 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • 1 tbsp apple cider vinegar or orange juice
  • 1 tsp Dijon mustard
  • salt and pepper to taste

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Place mixed greens in a large serving bowl.
  2. Add pomegranate seeds, citrus slices, cheese, nuts, and red onion.
  3. Whisk olive oil, honey, vinegar, mustard, salt, and pepper to form dressing.
  4. Drizzle dressing over salad before serving.
  5. Toss gently and garnish with fresh herbs if desired.

Prepare ingredients ahead and dress only at serving time to maintain freshness.
