Base
  • 1 cup rolled oats
  • 2 cups milk or almond milk
  • 1 apple diced
  • 1 tbsp maple syrup or honey
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 1 tsp vanilla extract
  • 1 pinch salt
Toppings
  • 2 tbsp pecans or walnuts chopped
  • extra apple slices and cinnamon for garnish

Method
 

  1. In a medium saucepan, bring the milk and salt to a gentle simmer over medium heat.
  2. Stir in the rolled oats and cook for about 5 minutes, stirring occasionally, until the oats begin to soften.
  3. Add the diced apple, cinnamon, nutmeg, and vanilla extract. Continue to cook for another 5–7 minutes, until the apples are tender and the oats have absorbed most of the liquid.
  4. Stir in the maple syrup or honey to sweeten. Taste and adjust sweetness as desired.
  5. Remove from heat and let the oatmeal sit for 1–2 minutes to thicken.
  6. Spoon into bowls, topping with chopped pecans, extra apple slices, and a sprinkle of cinnamon.

Notes

For extra indulgence, drizzle with caramel or add a dollop of whipped cream for a true dessert-for-breakfast vibe.
