- In a medium saucepan, bring the milk and salt to a gentle simmer over medium heat.
- Stir in the rolled oats and cook for about 5 minutes, stirring occasionally, until the oats begin to soften.
- Add the diced apple, cinnamon, nutmeg, and vanilla extract. Continue to cook for another 5–7 minutes, until the apples are tender and the oats have absorbed most of the liquid.
- Stir in the maple syrup or honey to sweeten. Taste and adjust sweetness as desired.
- Remove from heat and let the oatmeal sit for 1–2 minutes to thicken.
- Spoon into bowls, topping with chopped pecans, extra apple slices, and a sprinkle of cinnamon.
Notes
