Ingredients
  

  • 2 cups all-purpose flour
  • 2 tbsp brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract

Method
 

  1. Whisk dry ingredients together in a large mixing bowl.
  2. In another bowl, whisk eggs, milk, melted butter, and vanilla until smooth.
  3. Combine wet and dry ingredients, stirring gently until just combined.
  4. Heat skillet over medium heat, grease lightly with butter.
  5. Pour 1/4 cup batter for each pancake, cook until bubbles form, then flip and cook until golden brown.
  6. Serve warm with syrup and a sprinkle of cinnamon sugar.

Notes

For extra fluffy pancakes, let the batter rest for 5–10 minutes before cooking.
