Ingredients
  

Salad Base
  • 6 cups romaine lettuce, chopped
  • 1 cup cooked chicken breast, diced
  • 4 slices cooked bacon, crumbled
  • 2 hard-boiled eggs, chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 0.5 cup crumbled blue cheese
  • 0.5 cup cucumber, diced
  • 2 tbsp chopped fresh chives
Lemon-Dijon Dressing
  • 0.25 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 0.5 tsp garlic powder
  • salt and pepper to taste

Equipment

Method
 

  1. Whisk all dressing ingredients together in a bowl until smooth.
  2. Cook chicken and bacon as desired; dice and set aside.
  3. Boil, peel, and chop eggs.
  4. Arrange lettuce in a serving bowl and top with rows of chicken, bacon, eggs, avocado, tomatoes, cucumber, and blue cheese.
  5. Drizzle with dressing and sprinkle with chives before serving.

Notes

For meal prep, keep dressing separate and toss just before serving.
