Ingredients
  

Soup
  • 1 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp red curry paste
  • 1 carrot, sliced
  • 1 potato, diced
  • 1 red bell pepper, sliced
  • 4 cups broth (chicken or vegetable)
  • 1 can coconut milk 13.5 oz
  • 1 tbsp soy or fish sauce
  • 1 tsp turmeric
  • 1 tsp paprika
  • 2 cups spinach or kale
  • salt and pepper to taste
Dumplings
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 2 tbsp butter, cubed
  • 0.5 cup milk

Equipment

Method
 

  1. Sauté onion, garlic, and ginger in olive oil.
  2. Add curry paste and cook 1–2 minutes.
  3. Add vegetables, broth, coconut milk, and seasonings.
  4. Simmer 10–12 minutes until vegetables soften.
  5. Mix dumpling ingredients and drop dough into soup.
  6. Cover and cook 12–15 minutes until dumplings are fluffy.
  7. Add greens and adjust seasoning.
  8. Serve with lime and herbs.

Notes

Cover the pot to keep dumplings fluffy. Add broth when reheating.
