Ingredients
  

Rice Base
  • 1 cup jasmine rice rinsed
  • 1 cup coconut milk full-fat
  • 1 cup water
  • 1 tablespoon sugar
  • 0.5 teaspoon salt
  • 1 tablespoon coconut oil or butter

Equipment

  • Saucepan with lid
  • Measuring cups

Method
 

  1. Rinse the rice under cold water until mostly clear.
  2. Combine rice, coconut milk, water, sugar, salt, and coconut oil in a saucepan.
  3. Bring to a gentle boil over medium heat.
  4. Reduce heat to low, cover, and simmer until liquid is absorbed.
  5. Remove from heat, let steam covered for 5 minutes, then fluff with a fork.

Notes

Adjust sweetness and salt to taste. Garnish with toasted coconut or herbs if desired.
