Ingredients
  

Chipotle Chicken
  • 2 lbs boneless skinless chicken thighs
  • 3 tbsp chipotle peppers in adobo, chopped
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tbsp vinegar white or apple cider
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Mixing bowls
  • Baking sheet

  • Hand mixer or stand mixer

Method
 

  1. Mix chipotle peppers, garlic, oil, lime juice, vinegar, cumin, oregano, smoked paprika, chili powder, salt, and pepper.
  2. Add chicken thighs and marinate at least 30 minutes or overnight.
  3. Heat grill or skillet to medium-high heat.
  4. Cook chicken 5–7 minutes per side until charred and cooked through.
  5. Rest five minutes, then chop into small pieces.
  6. Serve in bowls, tacos, or burritos.

Notes

Marinating overnight enhances flavor. Chopping after cooking creates authentic Chipotle texture.
