- Mix chipotle peppers, garlic, oil, lime juice, vinegar, cumin, oregano, smoked paprika, chili powder, salt, and pepper.
- Add chicken thighs and marinate at least 30 minutes or overnight.

- Rest five minutes, then chop into small pieces.
