Ingredients
  

Cilantro Lime Rice
  • 1 cup long-grain white rice
  • 1 tbsp butter or olive oil
  • 2 cups water or chicken broth
  • 1/2 tsp salt
  • 1/4 cup fresh cilantro, chopped
  • 1 tbsp lime zest
  • 2 tbsp fresh lime juice
  • 1 tbsp fresh lemon juice (optional)
  • 1/4 tsp garlic powder (optional)

Equipment

  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Rinse the rice until water runs mostly clear.
  2. Toast rice in butter for 1–2 minutes.
  3. Add water or broth and salt. Bring to a boil.
  4. Cover and cook on low for 15 minutes.
  5. Let rest covered for 5 minutes.
  6. Fluff and stir in lime zest, lime juice, cilantro, and optional garlic.
  7. Adjust seasoning and serve warm.

Notes

Add lemon juice for a closer Chipotle-style flavor. Adjust lime to taste.
