Method
- Rinse the rice until water runs mostly clear.
- Toast rice in butter for 1–2 minutes.
- Add water or broth and salt. Bring to a boil.
- Cover and cook on low for 15 minutes.
- Let rest covered for 5 minutes.
- Fluff and stir in lime zest, lime juice, cilantro, and optional garlic.
- Adjust seasoning and serve warm.
Notes
Add lemon juice for a closer Chipotle-style flavor. Adjust lime to taste.
