Ingredients
  

Chicken
  • 1 whole chicken, cut into pieces
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 medium shallots, chopped
  • 2 cloves garlic, minced
  • 10 oz mushrooms, sliced
  • 1 tbsp all-purpose flour
  • 2 cups dry Riesling wine
  • 1 cup chicken stock
  • 0.5 cup heavy cream

Equipment

  • Dutch oven or heavy pot
  • Wooden spoon
  • Chef’s knife

Method
 

  1. Season chicken with salt and pepper.
  2. Brown chicken in butter and olive oil until golden.
  3. Sauté shallots, garlic, and mushrooms.
  4. Add flour, wine, stock, herbs, and simmer with chicken until tender.
  5. Finish with cream and adjust seasoning before serving.

Notes

Use a dry Riesling for best flavor balance.
