Method
- Preheat oven to 375°F (190°C).
- Sauté onion, garlic, zucchini, and bell pepper until softened.
- Add spinach and cook until wilted.
- Whisk eggs, seasoning, cottage cheese, and half the shredded cheese.
- Stir in vegetables and pour into a greased baking dish.
- Top with remaining cheese.
- Bake 30–35 minutes until golden and set.
Notes
For a firmer texture, bake an additional 5–10 minutes.
