Ingredients
  

Main Ingredients
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 2 cups fresh spinach, chopped
  • 1 cup cottage cheese
  • 1 cup shredded mozzarella or cheddar
  • 4 large eggs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion, garlic, zucchini, and bell pepper until softened.
  3. Add spinach and cook until wilted.
  4. Whisk eggs, seasoning, cottage cheese, and half the shredded cheese.
  5. Stir in vegetables and pour into a greased baking dish.
  6. Top with remaining cheese.
  7. Bake 30–35 minutes until golden and set.

Notes

For a firmer texture, bake an additional 5–10 minutes.
