Ingredients
  

Cream Layer
  • 2 cups cottage cheese full-fat
  • 0.25 cup honey or maple syrup
  • 1 tsp vanilla extract
  • 2 tbsp Greek yogurt optional
Coffee Layer
  • 1 cup strong brewed espresso or coffee cooled
  • 1 tbsp cocoa powder optional
Base
  • 24 ladyfinger cookies
Topping
  • 2 tbsp unsweetened cocoa powder
  • dark chocolate shavings optional

Method
 

  1. Blend cottage cheese, sweetener, and vanilla until smooth.
  2. Dip ladyfingers briefly in cooled espresso.
  3. Layer dipped ladyfingers in dish.
  4. Spread half of cream mixture over layer.
  5. Repeat layers and refrigerate at least 4 hours.
  6. Dust with cocoa powder before serving.

Notes

Blend cottage cheese thoroughly for smooth texture. Chill overnight for best flavor.
